Ingredients
 

  • 2 cups (300 g) watermelon cubed
  • 3-4 mini cucumbers sliced
  • 3 oz (85 g) arugula
  • 4 oz (115 g) vegan feta cheese
  • ¼ cup (7 g) fresh mint
  • 2 tablespoons (30 mL) balsamic glaze
  • salt and pepper optional & to taste

Instructions

  • Add watermelon, cucumbers, arugula, feta and mint to a bowl or serving platter and gently toss to combine.
    2 cups watermelon, 3-4 mini cucumbers, 3 oz arugula, 4 oz vegan feta cheese, ¼ cup fresh mint
  • Drizzle the balsamic glaze over top and season with salt and pepper.

  • Serve chilled and enjoy!
